What is an easy recipe for Shahi Paneer?



 Shahi Paneer is a delightful Indian dish made with paneer (Indian cottage cheese) cooked in a rich, creamy, and aromatic gravy. Here's a simple recipe for Shahi Paneer:

Ingredients:

  • 250g paneer (cottage cheese), cubed
  • 2 tablespoons ghee (clarified butter) or oil
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 1 tablespoon ginger-garlic paste
  • 1/2 cup cashew nuts, soaked in warm water for 15 minutes
  • 1/2 cup milk
  • 1/2 cup cream
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 1 tablespoon dried fenugreek leaves (kasuri methi), crushed
  • Chopped fresh coriander leaves for garnish

Instructions:

  1. Prepare the Cashew Paste:

    • Drain the soaked cashew nuts and blend them into a smooth paste with a little water.
  2. Saute Onions:

    • Heat ghee or oil in a pan. Add finely chopped onions and sauté until golden brown.
  3. Add Ginger-Garlic Paste:

    • Add ginger-garlic paste to the onions and sauté for another minute until the raw smell disappears.
  4. Add Tomato Puree:

    • Pour in the tomato puree and cook until the oil separates from the mixture.
  5. Add Spices:

    • Add red chili powder, turmeric powder, coriander powder, and salt. Mix well and cook for a couple of minutes.
  6. Add Cashew Paste:

    • Add the cashew paste to the mixture and cook for another 2-3 minutes.
  7. Add Milk and Cream:

    • Pour in milk and cream. Stir well to combine all the ingredients.
  8. Add Paneer:

    • Gently add the paneer cubes into the gravy. Mix carefully to coat the paneer with the gravy.
  9. Simmer:

    • Let the Shahi Paneer simmer for 5-7 minutes on low heat. This allows the flavors to meld together.
  10. Finish:

    • Sprinkle garam masala and crushed kasuri methi (dried fenugreek leaves) over the Shahi Paneer. Mix gently.
  11. Garnish and Serve:

    • Garnish with chopped fresh coriander leaves.
    • Serve hot with naan, roti, or rice.
